From the moment we walked up the hill from our Inn to the Eco lifestyle and Lodge for an early breakfast, we were greeted with a gentle sounds of Duke Ellington & John Coltrane, “In a Sentimental Mood”. The bird saying all around us and the sun was just starting to warm the day. The lodge is nestled on the hill surrounded by lush Gardens, not the kind of gardens that are orchestrated, but those that are etched out of nature. It is bijou and a retreat…. The fine elegance of nature. Breakfast was delicious, and as I appreciate the importance of ingredients, it was clear that they were gathered fresh from local farms. However, as we sat down and sipped our first green papaya juice, and ate her eggs and brioche French toast, we realize that this was something different. It wasn’t just about ingredients, but how they magically came together to create a “ moment” The Lodge is located in Bathsheba, out of the way for some, but not for those searching for something special…… Over the next 10 days we ate at the lodge a number of times for breakfast and dinner. As much as I love the breakfasts, the two dinners we had were prepared with care and attention to detail. A salad of fresh mixed vegetables, including roasted eggplant that had been dredged in cassava flour overnight, had the most delicious turmeric vinaigrette. Richard, the chef, prepared his special lasagna in individual cast-iron skillets.. This was no ordinary lasagna, but made with roasted vegetables and topped with gorgeous strong cheddar, a creative departure from the usual mozzarella. Portions were generous and they provided containers to bring home any extra. On pizza night, I chose the vegetable pizza. Don’t expect the usual, it was a thin sourdough crust, with caramelized, onions, roasted vegetables, and some delicious beets snuggled into the cheese. … sublime combination.. I cannot overestimate the beauty of the surroundings and the quality of the food. However, it was the people and the welcome we received that will remain with us. We live in a small town in Nova Scotia, which is visited by thousands of visitors every year. Remembering this wonderful kindness, which was shown to us, I realize that I want to make sure that our visitors have the same kind of greeting and remember our town as fondly as I remember Bathsheba and the echo lifestyle and lodge.
