Hosts Emre and Begum are a delightful couple who are passionate about the history and architecture of their wonderfully restored hotel and work hard to make you feel relaxed and at home. They have managed to successfully retain the old rock hewn rooms while including simple home comforts (like underfloor heating and powerful showers). We stayed in a former stable, next door was the original chapel - still with it's domed ceiling above (what I assume) was the altar. Other rooms include the former wine cellar and take a peek into the "library" where you can peruse heavy, centuries old books that are a historian and book lovers dream. Breakfast is a culinary experience with varieties of deliciously fresh breads, cheeses, fruits, homemade preserves and honey as well as eggs made however you like them (Turkish eggs are particularly good!). Sipping wine or tea on the upper outdoor terrace watching the sun go down is a great way to put the world to rights with fellow guests (there are only 12 rooms) or listen to Emre recount the project to recover and renovate this treasure of a building. If you're looking for a relaxing ambience in an authentic rock cave dwelling with the highest level of guest attentiveness, look no further. Highly recommended.
